Bar Cookies

I used to have a recipe for an easy cookie bar, I think they were called Scrumptious Bars, but I'm not sure. Does anybody have the recipe?

I have heard these are showing up in the states, but they are very popular up in Canada.

Nanaimo Bar Recipe
Bottom Layer

* ½ cup unsalted butter (European style cultured)
* ¼ cup sugar
* 5 tbsp. cocoa
1 egg beaten
* 1 ¼ cups graham wafer crumbs
* ½ c. finely chopped almonds
* 1 cup coconut

Melt first 3 ingredients in top of double boiler. Add egg and stir to cook and thicken. Remove from heat. Stir in crumbs, coconut, and nuts. Press firmly into an ungreased 8" x 8" pan.

Second Layer
* ½ cup unsalted butter
* 2 Tbsp. and 2 Tsp. cream
* 2 Tbsp. vanilla custard powder
* 2 cups icing sugar

Cream butter, cream, custard powder, and icing sugar together well. Beat until light. Spread over bottom layer.

Third Layer
* 4 squares semi-sweet chocolate (1 oz. each)
* 2 Tbsp. unsalted butter

Melt chocolate and butter over low heat. Cool. Once cool, but still liquid, pour over second layer and chill in refrigerator.

These are delicious. You can also vary the recipe with peanut butter, cappuccino or mint flavor instead of custard.

Here is another good potluck dessert:

OATMEAL CAKE

Put in large bowl and mix with mixer:

1 cup oats 1/2 tsp. salt
1 cup brown sugar 1 tsp. baking soda
1 cup white sugar 1 tsp. cinnamon
1 1/3 cups flour 1 tsp. nutmeg

Add to above and beat with mixer:

1/2 cup (one stick) butter or margarine
2 eggs
1 1/2 cups boiling water

Mixture will be “soupy”. Pour in greased pan 13” x 9” x 2”

TOPPING

Mix together and spoon over cake in pan before baking. It will sink to bottom.

1 cup nuts, chopped 1 cup cocoanut
1/2 cup brown sugar 1/4 cup cream (I use milk)
1/2 cup white sugar 1 tsp. vanilla
6 tsp. melted butter

Bake in 350 oven, 45 minutes or til done.

Not sure if these are the same bars, but they are yummy. Enjoy!

Combine the following like a pie crust and pat into a 13x9 pan:

1 yellow cake mix
1 cube butter
1 egg, beaten

Mix the following with mixer:

1 lb. powdered sugar
2 eggs
8 oz. cream cheese

Spread over crust.

Bake 40-45 mins. at 325-350 degrees.
